Sugar-Free Banana Cake Recipe

– 375 g (3 cups) white whole wheat flour, spooned, leveled, and sifted. – ▢2 teaspoons baking powder – ▢1 teaspoons baking soda – ▢½ teaspoon cinnamon – ▢4 large eggs , room temperature – ▢1-½ cups (about 3 medium) overripe bananas, mashed and mix with 2 tablespoons of freshly squeezed lemon juice. – ▢1 cup avocado oil or expeller-pressed sunflower oil


Preheat your oven to 350ºF. Line a 13 by 9-inch baking pan with parchment paper, or grease it with butter and flour it.

In a medium bowl, mix together the flour, cinnamon, baking powder, and baking soda. Set this aside.

In a large bowl, whisk together the avocado oil, salt, and sugar until well combined. Add the mashed bananas and vanilla extract, and mix until everything is mixed together.

Add the eggs one at a time, whisking well after each addition until they are fully mixed in.

Gradually add the dry ingredients into the wet mixture, gently mixing until just combined. Be careful not to overmix.

Pour the batter into the prepared pan and bake the Banana Cake for about 45 to 50 minutes, or until it's golden brown and a toothpick inserted into the center comes out clean.
