Almost-famous Pumpkin Cheesecake Recipe

Ingredients: 1. 1 1/2 cups graham cracker crumb 2. 1/4 cup granulated sugar 3. 1/2 cup unsalted butter, melted 4. 3 (8-ounce) packages cream cheese, softened 5. 1 cup granulated sugar 6. 1 teaspoon vanilla extract 7. 4 large egg 8. 1 cup canned pumpkin puree 9. 1 teaspoon ground cinnamon 10. 1/2 teaspoon ground nutmeg

Instructions: 1. Preheat your oven to 325°F (165°C). Grease a 9-inch springform pan.

In a mixing bowl, combine the graham cracker crumbs, 1/4 cup of granulated sugar, and melted butter. Press the mixture into the bottom of the prepared springform pan. 

In a large bowl, beat the cream cheese until smooth. Add 1 cup of granulated sugar and vanilla extract, and beat until well combined. 

1. Add the eggs one at a time, beating well after each addition. 2. In a separate bowl, mix together the pumpkin puree, cinnamon, nutmeg, cloves, ginger, and flour until well combined.

1. Gradually add the pumpkin mixture to the cream cheese mixture, beating until smooth. 2. Pour the batter over the prepared crust. Smooth the top with a spatula.

Bake in the preheated oven for 60-70 minutes, or until the center is set. 

Allow the cheesecake to cool in the pan for 10 minutes, then run a knife around the edge to loosen. Remove the sides of the springform pan. 

Chill the cheesecake in the refrigerator for at least 4 hours before serving.
