Chia Egg

US Customary – Metric – 1 Tbsp chia seeds – 2 1/2 Tbsp water

Ingredients

Put chia seeds in a small dish and pour water over them. Mix it up, then set it aside for 5 minutes to thicken.

It needs to be thick and gel-like. It can't be used in place of an egg in every recipe because it doesn't bind and get stiff like an egg does.

But it works well in pancakes, quick breads, muffins, cookies, and many other baked goods, just like a flax egg.
