Date Caramel

US Customary – Metric – 20 large pitted dates (if not moist and sticky, soak in warm water for 10 minute then drain) – Water (to thin) – 1 pinch sea salt (optional)

Ingredients

Put pitted dates into a high-speed blender or food processor. I've found that a food processor works best for getting a thick texture without adding a lot of water.

Mix or pulse on low until only a few small bits are left. Then add hot water slowly while the blender is running until a paste forms.

You will have to scrape down the sides and push it along every so often.

Make sure you only add the right amount of water to make a paste.

You can leave it as is or add a pinch of salt to make it taste better.

Will stay fresh in the fridge for at least two weeks if you cover it.
