DIY Gluten-Free Flour Blend

– 1 1/2 cups brown rice flour – 1/2 cup potato starch – 1/4 cup white rice flour – 1/4 cup tapioca flour – 1 tsp xanthan gum (optional // not necessary)

Ingredients

It can be hard to do this because gluten-free flours react in different ways in almost every recipe.

you can add a pinch of xanthan gum to help the dough stick together more, but I don't think it's necessary.

This mix has been great in corn bread, muffins, cakes, quick breads, gingerbread cookies, waffles, pancakes, and many other recipes.

There's also a Gluten Free Whole Grain Pancake Mix that works great with an egg.

It's also used in a Gluten Free Pizza Crust, though the mix is slightly different.
