Easy Masala Chai Recipe

– 1 whole cinnamon stick – 6-8 green cardamom pods – 1 tsp whole black peppercorns – 3-4 whole cloves – 2 ½ cups water – 2 Tbsp grated ginger (for less intense ginger flavor, slice instead of grating)


Put the cinnamon stick, cardamom pods, peppercorns, and cloves in the bowl of a mortar (or a cutting board).

use a pestle (or a heavy pan) to crush the spices a bit. You're not turning it into a powder

you're just breaking it up into small pieces (see picture).

Crumble the spices, add water, and grate or slice the ginger into a medium-sized pot.

Set the pan on high heat and boil the mixture. Note: If you want a less gingery coffee, cut the ginger into slices instead of grating it.

Then turn down the heat to medium or medium-low and keep it simmering for 15 minutes, or until it's about one-third gone.
