Granola Bars

– 1 heaping cup packed dates (pitted // deglet noor or medjool)* – 1/4 cup maple syrup or agave nectar (or honey if not vegan) – 1/4 cup creamy salted natural peanut butter or almond butter – 1 cup roasted unsalted almonds (loosely chopped // see instructions for roasting nuts) – 1 1/2 cups rolled oats (gluten-free for GF eaters)


Use a food processor to break up the dates into small pieces (about one minute).

You can toast your oats and nuts if they are raw in an oven set to 350 degrees F (176 degrees C) for 10 to 15 minutes,

Put the dates, almonds, and oats in a large bowl and set it away. In a small pot over low heat, warm the peanut butter and maple syrup (or agave or honey). Pour over the oat mixture and stir.

Then mix the dates into the mixture by breaking them up.

Move the mixture to an 8x8-inch baking dish or another small pan lined with plastic wrap or parchment paper so they are easy to remove

A cake pan might work, but the bars will be thicker; change the size of the pan if you want to change the batch size.
