Grilled Salmon

– ▢2 pounds salmon – ▢7 tablespoons olive oil divided (¼ cup + 3 tablespoons) – ▢½ cup chopped fresh herbs – parsley, basil, dill, and/or thyme, divided – ▢3 tablespoons Dijon mustard – ▢1 tablespoon honey – ▢4 cloves garlic minced – ▢1 tablespoon lemon juice (from ½ lemon) – ▢1 tablespoon lemon zest (from 1 lemon) – ▢½ teaspoon kosher salt

Ingredients

Mix together 3 tablespoons of olive oil, half of the chopped fresh herbs, Dijon mustard, honey, minced garlic, and lemon juice.

Spread this mixture over the salmon pieces, covering the pink flesh.

In another bowl, mix the remaining chopped fresh herbs, remaining olive oil, lemon zest, salt, pepper, and crushed red pepper flakes. Set aside.

. Place the salmon pieces on the grill, skin side down.. Grill for 3-4 minutes.

Flip the salmon and grill for another 3-4 minutes or until cooked to your liking.

Spoon the herb sauce over the salmon before serving.
