Grilled Zucchini with Lemon Yogurt, Feta & Mint

– ½ garlic clove, finely minced – ¼ cup crumbled feta cheese – ¼ cup fresh mint – Pinch of red pepper flakes – Sea salt and freshly ground black pepper


Lightly coat the zucchini with olive oil, salt, and pepper. Grill them cut-side down for 2 minutes, then flip them and grill the skin side for 3 to 4 minutes until you see grill marks.

In a small bowl, mix together yogurt, lemon zest, garlic, and a pinch of salt.

. Spread the yogurt mixture on a serving platter. . Arrange the grilled zucchini on top of the yogurt.

Sprinkle crumbled feta cheese, chopped mint, and red pepper flakes over the zucchini.

 Add more salt and pepper to taste if you want. Serve it up and enjoy your dish
