Guacamole Beyond Burgers

– 3 small sweet potatoes – Extra-virgin olive oil, for drizzling – Pinches of chili powder – Pinches of smoked paprika – Pinches of cayenne pepper, optional – Sea salt and freshly ground black pepper


Boil some water in a big pot and cook the sweet potatoes until they're almost soft. Take them out and let them cool. Then, cut them into wedges.

For the guacamole: In a bowl, mix together avocados, lime juice, onion, cilantro, jalapeno, cumin, and a bit of salt. Mash it all up until it's well combined. Taste it and add more salt if needed.

Heat up a grill to medium heat. Put some olive oil, salt, and pepper on the sweet potato wedges. Grill them for about 5 to 6 minutes on each side until they're nicely charred.

grill the Beyond Burgers according to the instructions on the package, about 3 minutes on each side.

When the sweet potatoes are done, sprinkle them with chili powder, smoked paprika, cayenne, and more salt if you like.

Serve the Beyond Burgers with the guacamole, any other toppings you like, and the grilled sweet potato wedges.
