Mexican Quesadilla Casserole

– cooking spray – 1 pound ground beef – ½ cup chopped onion – 1 (15 ounce) can tomato sauce – 1 (15 ounce) can black beans, rinsed and drained – 1 (14.5 ounce) can diced tomatoes with lime juice and cilantro (such as RO*TEL®)


Turn the oven on to 350 degrees F (175 degrees C). Spray cooking spray on a 13x9-inch baking dish.

Use medium-high heat to warm up a big pot. In a hot pan, cook and stir the beef and onion for 5 to 7 minutes, or until the beef is fully browned. Drain the beef and onion and throw away the grease.

Mix ground beef with tomato sauce, black beans, corn, chopped green chiles, diced tomatoes with lime juice and cilantro, and chopped tomatoes. Add cumin, garlic, oregano, and red pepper flakes to taste.

Turn the heat down to low and simmer the mixture for 5 minutes. Spread about 1/2 cup of the beef mixture in the bottom of the baking dish that has been prepared.

Place three tortillas on top, covering them as needed. Add another half cup of the beef mix to the rolls. Put a cup of Cheddar cheese on top of the beef.

In a hot oven, bake for about 15 minutes, or until the food is hot all the way through and the cheese is melted. Allow to cool for 5 minutes before using.
