Roasted Mushrooms

– 16 ounces cremini mushrooms, quartered, or mixed mushrooms, torn – 2 tablespoons extra-virgin olive oil – 1 tablespoon balsamic vinegar – 1 tablespoon tamari or soy sauce – Freshly ground black pepper – 1 tablespoon chopped fresh parsley – 1 tablespoon fresh thyme leaves

Ingredients

Pour olive oil, balsamic vinegar, and tamari over them. Add pepper and mix well so everything is coated.

Roast in the oven for 18 to 20 minutes. Stir them halfway through cooking. They're ready when they're soft and browned on the edges.

Take them out of the oven and mix in parsley and thyme.
